Sandan is a very popular traditional dish

 from konkan region of Maharashtra.




Ingredients

2 cups idli rava (semolina)
½ cup mango pulp
2-3 table spoon fresh coconut, grated
1 cup sugar
½ tea spoon soda bicarbonate
2 table spoon ghee

Preparation 

Heat 2 table spoons of ghee in a pan. Add idli

rava and fry till the semolina (rava) appears light. Let it cool.

Then take mango pulp and sugar in a bowl and mix it well till the sugar dissolves into it.

Keep this mixture aside for ½ an hour.

When everything is ready take roasted idli rava in a bowl and add mango-sugar pulp into it.

Mix it well. Then add grated coconut and soda bi carbonate into this mixture.

Mix well and pour the mixture in greased with butter/ghee pan.

Spread in the center of the
pan with a thin layer. Steam the sandan for 20 minutes.

Sandan tastes best with coconut milk or ghee.
